Cinnamon Tortilla Crisps Ingredients:
2 Med sized Flour Tortillas, cut into triangle wedges 4-6 pieces
Enough Softened Butter to spread over tortillas
1/4 cup Sugar
1/2 tsp. Cinnamon
Preheat oven to 350 degrees F.
mix sugar and cinnamon in a small bowl. Spread butter evenly over the tortillas wedges. Lightly spray a baking sheet with non-stick spray
Lay tortilla wedges in a single layer on baking sheet. Sprinkle the sugar and cinnamon mixture to cover the tortillas. Bake for about 7 min. until crisp. enjoy!
Kids can help by brushing on butter and sprinkling cinnamon sugar mixture
Special Burritos
6 burrito size flour tortillas
1/2 cup of chopped onion
1 lb lean ground beef
1 tbs vegetable oil
28 oz can of refried beans
1 cup shredded cheddar or montery jack cheese
1 28 oz can of Enchilada Sauce
Optional:
Salsa
Sour Cream
In a skillet brown ground beef add onion. Heat oil In a seperate skillet and add beans (be careful that the oil isn't too hot otherwise beans will splatter). Warm tortillas to make more flexible either on the stove top or Microwave according to package directions. Meanwhile heat enchilada sauce in a saucepan. When the beans and ground beef are finished fill 1/6 of the mixture in a strip onto each tortilla and a little cheese and salsa if desired. Fold one end over about 2 inches and then fold the sides. Place the seam side down on a plate and top with heated enchilada sauce until burritio is covered. Top with cheese and sour cream if desired.
Serves about 6
Tortilla Soup
1 lime
vegetable oil
1/2 cup chopped onion
1/2 tsp cumin
1 clove garlic, minced
1 can condensed Campbell's Chicken Broth
1 soup can of water
1/2 cup chopped tomato
1 4oz can chopped green chilies
3 Corn Tortillas
Shredded Monterey Jack or Cheddar Cheese
1 Cup Shredded Lettuce
Cut 3 thin slices of lime: set aside. Squeeze 1 tsp juice from lime; set aside.
In 2 qt saucepan over medium heat 1 tablespoon hot oil cook onions, oregano, and garlic until onion is tender.
Add Broth, water, tomato, chilies, and reserved lime juice. Heat to boiling, reduce heat to low; cook 10 min.
Meanwhile cut tortillas into thin strips and fry in 1/2 inch oil until crisp. Remove to paper towels to dry.
Place several tortilla strips into 3 bowls. Ladle soup into bowls and sprinkle with Cheese. Top with lime slices and lettuce. Serve immediately.

"Easy Chicken Quesadillas"
INGREDIENTS:
1 Large Flour Tortilla
1/3 cup grated cheddar or Monterey Jack cheese
1/4 Cup of Shredded Chicken
Salsa if desired

Place the ingredients on 1/2 of the tortilla fold over and bake in oven on a baking sheet for 5-10 minutes until cheese is melted
